Vegan Recipe - Banana Bread

For the first 20 days of October I’ve been running a daily caloric deficit of 815 calories eating 100% vegan. It hasn’t been terribly difficult due to 2 products I’ve started that COMPLETELY kill my appetite.

Today after seeing brown bananas in the kitchen I decided I wanted banana bread. Because I am a man and not a child instead of asking Kim to make some, I did some research and found a great recipe. But because I’m a man I re-did the recipe - hahah!! Actually I did some things differently because I didn’t want all the sugar the recipe called for (click the image below for the recipe). The brand of Vegan shake that we love tastes pretty sweet so I added a scoop of that to the recipe to bump up the protein and for the sweetness.

It turned out AWESOME!!!

MY VERSION

  • Preheat the oven to 350°.

  • Lightly oil a 9-inch loaf pan and arrange a strip of parchment paper width-wise along the center, with just a bit hanging out over each side.

  • Peel 3 bananas and place them into a large mixing bowl. Mash them well with a fork or potato masher.

  • Add 1 scoop of Vegan Protein, ⅓ cup cup coconut oil, and 2 tbs vanilla extract to the bowl. Stir until well-mixed.

  • Add 2 cups all purpose flour to the bowl, then sprinkle 1 tbs each of baking soda, cinnamon and salt on top of the flour.

  • Stir everything together just until mixed. Don't overmix. The batter will be thick.

  • Fold in 1 cup walnuts.

  • Spoon the batter into the prepared loaf pan and smooth out the top with the back of a spoon.

  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.

  • Remove the pan from the oven and transfer it to a cooling rack. Allow the loaf to cool for at least 15 minutes before removing it from the pan.
